Rosemont Inn Kitchen: Tested Muffin Additions
Add 1 ½ cups finely chopped apple, cored but not peeled, and ½ teaspoon cinnamon on top of Rosemont Inn Muffin Mix before folding together with spatula. (Tart apple is best but any cooking apple will work).
Banana Oat Nut
Add 1 ½ cups mashed banana, ½ cup oats and ¼ cup chopped nuts with ½ teaspoon cinnamon to wet ingredients before adding Rosemont Inn Muffin Mix.
Mash 1 large banana with liquids. Sprinkle 1 cup blueberries onto Rosemont Inn Muffin Mix before folding together.
Mash 1 large banana and add to liquid. Add 1 cup chopped blackberries and ¼ teaspoon cinnamon onto Rosemont Inn Muffin Mix before folding together.
Add 1 ½ cups chopped blackberries and ½ cup shredded sharp cheddar cheese as well as ¼ teaspoon each mace and nutmeg onto the dry Rosemont Inn Muffin Mix before folding together. (This combination is based on an Amish recipe. It sounds strange but is unusually good.)
Add 1 ½ cups chopped fresh or frozen cranberries and 2 teaspoons grated orange zest onto the dry Rosemont Inn Muffin Mix before folding. For a less tart muffin, add an additional ¼ cup sugar to the wet ingredients.
Add 1 ½ cups pumpkin or winter squash puree to liquids along with ½ teaspoon cinnamon, 1 teaspoon dry ginger and ½ teaspoon mace (or add 2 teaspoons pumpkin pie spice). Reduce water to only ¼ cup.
Add 1 ½ cups of mashed strawberries in place of water to liquids as well as ½ of a mashed large banana.
Add 1 ½ cups of canned crushed pineapple with juice to liquids in place of water along with ½ cup of unsweetened coconut flakes.
