1 cup sour cherries (fresh or frozen and pitted)

1/2 cup grade B maple syrup

Place cherries and syrup in small saucepan and bring to a simmer. Lower the heat and simmer until cherries are poached (the skin will look wrinkled rather than smooth) and the syrup is slightly thickened, about 20-30 minutes.

Serve while warm with waffles or pancakes. If desired, cool and use as you would any dessert sauce.
